Cette micro cuvée est produite à partir de notre plus vieille parcelle , au rendement très limité (30hl/ha) et présente une situation géographique privilégiée à l’orée des bois, sur des sols argilo-calcaires. Cette cuvée a bénéficié d’un élevage particulier en fût de 400 litres pendant 18 mois, avec des bâtonnages successifs et réguliers, ce qui lui confère une couleur intense et un bouquet fin et élégant, aux arômes de fruits mûrs et vanillés. Vieilles vignes de 80 – 100 ans, vins structurés et de garde.

Wine making

Viticulture in the process of conversion. Traditional hand picking. Use of sorting tables, Fermentation in oak barrels, Use of indigenous yeast, Regular bâtonnage (stirring up the lees). Ageing in oak barrel, Elevage en barriques françaises. Sols argilo-calcaires.

Appareance

Deep purple colour, dark, ink highlights.

Oaky, balanced, blackcurrant aromas, stone fruit aromas, prune aromas, slight liquorice aromas, subtle vanilla aromas, arômes de toasté, arômes de grillé, subtle oak aromas.

Palate

Gourmande, generous, full-bodied, stone fruit hints, prune hints, vanilla hints, dense tannin, elegant tannin, soft tannin, round, powerful body, strong intensity.
